may i ask, which program executes the command that saves the file
"audio-PCMU-1" sip conversation to the directory ~/../testProgs/ ?

The latter. "playSIP", like "openRTSP", is a command-line
application that saves the received audio (and video, if present)
streams into files.

It is raw PCM audio.
